  Steak Fajitas Ingredients: 2 Tbsp Olive Oil 1 Pk Soft Tortilla Shells Steak Seasoning: 2 lbs Sirloin Steak 2 Tsp Olive Oil 1 Tsp Cumin 1/2 Tsp Chili Powder 1/2 Tsp Ancho Chili Powder 1/2 Tsp Smoked Paprika 1/4 Tsp Cayenne Pepper 3 Tsp Minced Garlic Fajitas: 1 Large Onion Sliced 1 Red Bell Pepper Sliced 1 Green Bell Pepper Sliced 1 Yellow Bell Pepper Sliced Salt Pepper Toppings: Shredded Lettuce Tomatoes Diced Sour Cream Rice or Beans Guacamole 1. Heat a large skillet over medium-high heat and add 1 tbsp olive oil. 2. Combine all steak seasonings in a gallon baggie. Slice Steaks into thin-ish strips and place them in the baggie.   Healthy Chicken Parmesan w/ Vegetables Ingredients: Sided Baking Sheet Aluminum Foil or Parchment Paper Cooking Spray Chicken: 2 lbs Boneless, Skinless Chicken Breast 1/3 Cup Grated Parmesan Cheese 1/3 Cup Italian Breadcrumbs 2 Tbsp Olive Oil 1-2 Tsp Minced Garlic 1/2 Tsp Salt 1/2 Tsp Ground Pepper Potatoes: 2 lbs Red Gourmet Potatoes Cut into Halves 2 Tbsp Grated Parmesan Cheese 2 Tbsp Olive Oil 1 Tsp Minced Garlic Salt Pepper Green Beans: 1 lb Green Beans w/ Ends Cut 1 Tbsp Grated Parmesan Cheese 1 Tbsp Olive Oil 1/2 Tsp Minced Garlic Salt Pepper 1. Preheat your oven to 425 degrees. 2. Line the baking sheet with aluminum foil or parchment paper for easy cleanup. Spray with cooking spray to prevent sticking. 3.   Quick & Easy Chicken Quesadillas Ingredients: 1 pk Soft Tortilla Shells Olive Oil Ancho Chili Powder 8 oz Shredded Mexican Cheese 2 lbs Boneless, Skinless Chicken Breast Chunked 1 pk Taco Seasoning 1 Cup Mayo 1 Cup Sour Cream 1 Small Can Salsa Verde Skillet, Grill, or Blackstone 1. Combine taco seasoning, mayo, sour cream, and salsa verde in a bowl. Mix well. Refrigerate. 2. Over medium heat, add a few drizzles of olive oil to a large skillet (you can use a grill or Blackstone as well, but leave the chicken whole until cooked). Add the chicken and sprinkle the ancho chili powder over it.  3. Warm your tortilla shell in a pan or on Blackstone top, ensuring each side is slightly brown. 4. Keeping the shell on your cooktop, add cheese and chicken to one side of the shell. On the other side, spread your salsa sauce evenly. Fold the sauce side over the cheese and chicken and flip.   Crockpot Mississippi Chicken Ingredients: 3-4 Boneless Skinless Chicken Breasts 1 Medium Onion Diced 1 pk Au Jus Gravy Mix 1 pk Ranch Dressing Mix 8-10 Pepperoncini Peppers 3/4 Cup Pepperoncini Juice 1/2 Cup Butter Sliced Crockpot Crockpot Liner 1. Place diced onion in the bottom of the crockpot. Add Chicken breast on top of the onion. 2. Sprinkle both packets of au jus gravy and ranch dressing mix over the chicken. 3. Add pepperoncini peppers and place sliced butter randomly over chicken breasts.  4. Pour pepperoncini juice over the chicken. 5. Cover and cook on high for 4-5 hours or low for 6-7 hours.

 Chicken Gyros w/ Tzatziki Sauce Ingredients Chicken Marinade 2 lb Boneless Skinless Chicken Breast Cut into Chunks 2 Tbsp Olive Oil 2 Tbsp Lemon Juice 2 Tsp Smoked Paprika 2 Tbsp Minced Garlic 2 Tsp Ancho Chili Powder 2 Tsp Turmeric Tzatziki Sauce 1 Cup Plain Greek Yogurt 1/2 English Cucumber Finely Chopped 2 Tbsp Onion Finely Chopped 1 Tsp Minced Garlic 1 Tsp Dry Dill Weed 1 1/2 Tsp Dill Pickle Juice 1 Pinch Sea Salt Serving 1 Pack Pita or Flatbread 1 Pk Shredded Lettuce 1.5 Cups Diced Tomatoes or 1 Cup Halved Cherry Tomatoes 1/2 Medium Red Onion Cheese Optional 1. Combine the ingredients for the chicken marinade in a gallon plastic bag. Shake well to combine the ingredients. Add the chicken pieces and shake well.  Mama's No Boil Lasagna You will need: 9x13 Casserole Dish Cooking Spray Aluminum Foil Lasagna Noodles Ground Beef 1 lb Ground Sweet Italian Sausage 1 lb 2-3 tsp Minced Garlic Botticelli Pasta Marinara 48 oz Ricotta Cheese 15 oz Shredded Mozzarella Cheese 8 oz Shredded Parmesan Cheese 8 oz 2 Large Eggs Salt 1/4 tsp Ground Pepper 1/4 tsp 1. Preheat oven to 350 degrees and spray your casserole dish with cooking spray. 2. In a large skillet over medium heat, brown the ground beef and italian sausage together. Drain off and discard grease. Add minced garlic and spaghetti sauce, simmering for about 5 minutes. 3. In a large bowl, mix the ricotta, 1/2-3/4 bag of mozzarella cheese, 1/2-3/4 bag of parmesan cheese, salt, pepper, and eggs. 4. Add a layer of your sauce to the bottom of the casserole dish. Add lasagna noodles to fit over the sauce (you may need to break one or two to cover the sauce.
