Creamy Butternut Squash Soup

 Mama Mullins' Creamy Butternut Squash Soup Ingredients: - Medium-Large Butternut Squash, Cubed - 3 Garlic Cloves - 2 Tsp Ginger - 1/4 Tsp Cinnamon - Medium Onion - 1/3 Tsp Thyme - 3/4 Cup Coconut Milk - 4 Cups Vegetable Stock - 3/4 Tsp Salt -1/4 Tsp White Pepper - 1 Tbsp Olive Oil Directions: 1.  In a large pot, drizzle in olive oil and add onion. Cook over medium heat. 2.  Add garlic and ginger and continue cooking over medium heat for 1-2 minutes. 3.  Add salt, cayenne, cinnamon, coconut milk and vegetable broth. Stir to combine all ingredients. Cover with a lid, reduce heat to low and let ingredients simmer for 5 minutes (This is when you will add squash if you are not roasting it). 4.  Once squash is done roasting, remove as much of the flesh as you can and discard skin. 5.  Add all of the squash and ingredient mixture to a food processor, blender, etc and puree for 2-3 minutes or until completely smooth. 6.  Pour soup back into the pot and reheat...

 Mama Mullins' Garlic Butter Chicken & Potatoes Foil Packs Yield: 4 Servings Prep Time: 10 Minutes Cook Time: 30 Minutes Total Time: 40 Minutes Ingredients: - 4 Medium Chicken Breasts - 4-5 Russet Potatoes - 3 Garlic Cloves Minced or 1/2 Jar Minced Garlic - 1 Stick Butter, Melted - 1 Tsp Salt - 1 Tsp Ground Black Pepper - 1 Tbsp Italian Seasoning - 1 Medium Onion Directions: 1.  Preheat oven to 400 degrees (If cooking on the grill, heat your grill at this time). 2.  Prepare 4 (10 in long) sheets of aluminum foil and set aside. 3.  Cut your potatoes in quarters/cubes (peel and then cut if you do not like the skin on yours). 4.  In a large bowl, combine potatoes, garlic, butter, onion, 1/2 tsp salt, 1/2 tsp pepper and Italian seasoning.  Mama Mullins' Chicken & Noodles Over Mashed Potatoes Ingredients: - 1 Package Egg Noodles - 2 Large Chicken Breast or 2 Cans Chicken - 22.6 oz Cream of Chicken Soup - 22.6 oz Cream of Mushroom Soup - Salt & Pepper, To Taste - Can of Chicken Broth - Butter - 5 Russet Potatoes - A Few Splashes of Milk Directions: 1.  If using chicken breast, bring to boil in chicken broth until cooked throughout, about 15-20 minutes and then shred. 2.  In a large pot, put water and a drizzle of olive oil and bring egg noodles to a boil. 3.  When noodles are soft, drain and bring back to low medium heat. Add chicken broth, chicken, both soups, and a large spoonful of butter. 4.  Stir frequently, as this mixture can burn easily. Add salt & pepper to taste. 5.  Peel and cut potatoes in small quarters.  Mama Mullins' Italian Chicken Bake Prep: 15 Minutes Cook Time: 2 Hours Total Time: 2 Hours 15 Minutes Ingredients: - 4-5 Russet Potatoes - Bottle of Italian Dressing - Bag of Baby Carrots - 1/4 Cup Soy Sauce - 4 Medium Sized Chicken Breasts Directions: 1.  Preheat oven to 375 degrees. 2.  In a glass casserole dish, place chicken breasts in the bottom. 3.  Cut potatoes in rounds and layer on top of the chicken. 4.  Put carrots on top and in any empty spaces along the sides, etc 5.  Pour soy sauce over the top of the whole mixture. 6.  Pour the bottle of italian dressing over the top of the mixture. Be careful not to fill the pan more than halfway, as it will bubble over in the oven. 7.  Place foil over the dish and bake for 2 hours. 8.  Let cool for a few minutes and then serve. Refrigerate leftovers.

 Mama Mullins' Bacon Crack Dip Ingredients : - 24oz Sour Cream - 1 Cup Cheddar Cheese - 1 Package Bacon Bits - 1 Packet Powdered Ranch Mix Directions: 1.  Crisp bacon in skillet or air fryer.  Mama Mullins' Garlic Honey Glazed Chicken Ingredients: - 4 Medium Sized Chicken Breasts - 1/2 Jar Minced Garlic (3 Cloves Minced) - 1/2 Cup Honey - Drizzle of Olive Oil - Salt & Pepper Directions: 1.  Salt & pepper chicken breasts and set aside. 2.  Heat a large skillet over medium high heat. When hot, drizzle olive oil into pan to coat. 3.  Add chicken to pan and cook thoroughly. 4.  Drain most grease and replace back on medium heat. 5. In a separate bowl, combine garlic and honey.  6.  Spread mixture over chicken and pan. If using cloves, put in pan between breasts and fry for about 3o seconds to 1 minute. 7.  Increase heat to medium high and continue to cook until the sauce reduces down and begins to slightly thicken.  8.  Serve hot & refrigerate leftovers.

 Mama Mullins' Funnel Cake Bites Ingredients: - 2 Cups Milk - 1 Egg - 1 Tsp Vanilla Extract - 2 Cups All Purpose Flour - Pinch of Salt - 1 Tsp of Baking Soda - 2 Tbsp Granulated Sugar - 6 Tbsp Melted Butter Directions: 1.  In a medium size bowl, combine milk, egg, vanilla, and butter. Mix well. 2.  In a separate bowl, combine salt, baking soda and sugar. Mix well and then add to your wet ingredients. 3.  Slowly fold in flour until batter becomes smooth. 4.  Pour batter into a gallon sized ziplock baggie and set aside for a few minutes.  Mama Mullins' Green Bean Casserole Yields: 6 Servings Prep: 10 Minutes Cook Time: 40 Minutes Ingredients: - 4 Cups of Fresh Cut Green Beans (14.5 oz Can (2)) - Cream of Mushroom Soup - 1 Can Fried Onions - 1/2 Cup Milk - Dash of Black Pepper Directions: 1.  Preheat oven to 350 degrees. 2.  In a large bowl, combine soup, milk, pepper, beans and half the can of fried onions. Mix well. 3.  Once completely mixed throughout, spread mixture into a 1 1/2 quart casserole dish. 4.  Bake, uncovered, for 25 minutes or until mixture is hot and bubbling. 5.  Sprinkle the remaining fried onions on top of the mixture and continue baking for 5 minutes or until the onions are golden brown.  Mama Mullins' Homemade Apple Sauce Yield: About 2 Cups Ingredients: - 6 Large Gala Apples - 1 1/2 Tsp Ground Cinnamon - 1/4 Cup Water - 3 Tbsp Brown Sugar Directions: 1.  Peel and slice apples. Make sure to cut into smaller sized pieces, as larger pieces will take longer to cook. Put them into a stock pot.  2.  Add water and cinnamon. Mix well. 3.  Heat on medium low until mixture begins to boil (about 1-3 minutes) 4.  Cover and reduce heat to simmer. 5.  Cook for about 20 minutes or until apples are mushy. Depending on how large your apple slices are, this could take up to 30 minutes. 6.  Stir in brown sugar and mash with a potato masher to make a chunky applesauce or a blender/mixer/food processor if you would like it to be creamier.

 Mama Mullins' Zuppa Toscana Soup (Olive Garden Copy Cat) Ingredients: - 1 lb Spicy or Mild Sausage (I use Bob Evans Brand) - Bacon Bits (8 Strips if cooking from scratch) - 1 Medium Yellow Onion (peeled and diced) - 1/2 Jar of Minced Garlic (2 Cloves if cooking from scratch) - 2 Tbsp Flour - 32oz Chicken Stock (2) - 4 Large Russet Potatoes (peeled and diced into 1/2 inch pieces) - 1 Cup Heavy Cream - 1/2 Bunch of Kale (destemmed and torn into bite sized pieces) - Salt & Pepper to taste Directions: 1.  Heat a large skillet over medium-high heat. Add a small drizzle of oil, then brown the sausage, crumbling into smaller pieces as it cooks. Add bacon bits when sausage is cooked entirely.  Mama Mullins' Homemade Alfredo Sauce ( Olive Garden Copy Cat) Yield: About 3 Cups Ingredients: - 4 Tbsp Butter - 4 Cloves Garlic (Finely Minced or Pressed) - 1 1/2 Cups Heavy Cream - 1 1/2 Cups Parmesan Cheese - 1 1/2 Cups Shredded Mozzarella Cheese Ingredients: 1.  Add butter and garlic to a skillet and cook over low heat. Allow to cook until butter is infused with the garlic, roughly about 5 minutes. 2.  Add heavy cream. stir and allow to simmer. Increase heat to medium. if needed. Continue to cook for 5 minutes, stirring occasionally. 3.  Turn heat down to medium-low and stir in the parmesan cheese and mozzarella. It will look goopy at first and then turn creamy and smooth as the cheese starts to melt. If sauce needs to be thinned, add an additional 1/2 cup of heavy cream. 4.  Serve hot over noodles, vegetables or as a dipping for breadsticks.

 Mama Mullins' Homemade Hot Cocoa Ingredients: - 2 Cups Granulated Sugar - 1 Tsp Salt - 1/2 Cup Cocoa - 1/2 Cup Water - 1/2 Tsp Vanilla Extract - 2 1/2 Cup Milk Directions: 1.  In a saucepan, combine sugar. salt, water and cocoa. Bring to a boil over medium heat, stirring constantly for about 2 minutes or until the chocolate is silky smooth. 2.  Add milk to the saucepan and stir together until hot. DO NOT BOIL. 3.  Remove from heat and stir in vanilla. 4.  Top with optional toppings such as marshmallows and chocolate syrup.

 Mama Mullins' Scrumptious Deviled Eggs Ingredients:  - 1 Carton of Eggs - 1/4- 1/2 Jar of Marzetti Slaw Dressing - Piping Bag - "Star" Piping Tip Directions: 1.  In a large pot, add water and salt. Place eggs in solution and boil about 20 minutes. 2.  Remove from heat and drain water. 3.  Crack and peel eggs. Set Aside.  4.  Take a knife and split each egg in half vertically. Place the middles in a separate bowl. Gently rinse the egg whites with water and place upside down on a paper towel to dry. 5.  Pat eggs dry and place in container or on plate. 6.  In the bowl with your egg middles, mix in Marzetti dressing until smooth and somewhat creamy. Be careful not to add too much or else the eggs will be runny. 7.  Once mixture is smooth, Place mixture into a piping bag with the "star" tip. Pipe each egg to the top with mixture.  Mama Mullins' Grandma's Pumpkin Rolls Prep Time: Cook Time: Total Time: Ingredients: - 2 Eggs - 3/4 Cup Flour - 1 Cup Sugar - 1 Tsp Cinnamon - 2/3 Cup Pumpkin - 1 Tsp Baking Soda Filling: - 8oz Cream Cheese - 2 Tbsp Butter - 1 Tsp Vanilla Extract - 1 Cup Powdered Sugar Directions: Grease pans with Bakers Joy. Combine ingredients in a bowl (eggs, flour, sugar, cinnamon, pumpkin and baking soda). Sprinkle some flour onto the table and roll out.  Place dough on a sided cookie sheet and back until spongy (about 12 minutes) at 375 degrees. Take a terry cloth and lay the roll onto. Beginning rolling into a roll. Let cool. In a separate bowl combine the remaining ingredients. Once the roll is cool, lather the mixture onto the roll and roll back up without the terry cloth. Wrap in foil with parchment paper or place in a sided dish and place in refrigerator.

 Mama Mullins' Scotcheroo's Yields: 12 Servings Prep Time: Cook Time: Total Time: Ingredients: - 1 Cup Light Corn Syrup - 1 Cup Granulated Sugar - 1 1/2 Rice Krispies - 1 Cup Butterscotch Chips - 1 Cup Semi Sweet Chocolate Chips Directions: 1.  Generously butter a 9x13 inch baking dish and set aside. 2.  In a large pot, mix together corn syrup, sugar and peanut butter. Cook over medium heat, stirring frequently until all ingredients are melted and mixed together. 3.  Bring to a boil.  Mama Mullins' Tasty Bacon Wrapped Water Chestnuts Prep Time: 20 minutes Cook Time: 30 minutes Total Time: 50 minutes Ingredients: - 1 Pound Bacon Strips - 8oz Can Whole Water Chestnuts, Drained (2) - 1/2 Cup Brown Sugar - 1/2 Cup Mayonnaise - 1/4 Cup Chili Sauce Directions: 1.  Preheat over to 350 degrees. 2.  Cut bacon strips in half. In a large skillet, over medium heat, cook bacon until almost crisp. When completely cooked, drain grease.  3.  Wrap each bacon piece around a water chestnut and secure with a toothpick. Place in an ungreased 13x9 inch glass baking dish. 4.  In a small bowl, combine the brown sugar, mayonnaise, and chili sauce. Pour the mixture over the bacon wrapped chestnuts. 5.  Bake, uncovered, at 350 degrees for 30 minutes.

 Mama Mullins' Santa Lovin' Sugar Cookies Yield: 3 dozen cookies (depending on the thickness) Prep Time: 30 minutes Cook Time: 6-8 Minutes Total Time: 38 Minutes Ingredients: - 1 Cup Butter  - 1 Cup Granulated Sugar - 1 Tsp Vanilla Extract - 1/2 Tsp Almond Extract - 1 Egg - 1 1/2 Tsp Salt - 3 Cups All Purpose Flour Directions: 1.  Preheat oven to 375 degrees. 2.  In a bowl, mix butter and sugar until smooth. 3.  Beat in extracts and egg. 4.  In a separate bowl, combine baking powder, salt, and flour. Add a little bit at a time to the wet ingredients, stirring well. Dough will be very stiff. If too stiff, wash hands and continue mixing by kneading the dough. 5.  DO NOT CHILL THE DOUGH!
